These strawberry tartlets are like a perfect miniature serving of strawberry pie. For these pretty pink fruit tarts, we used a cookie dough crust to hold a few spoonfuls of our fresh strawberry preserves.
Carrot soufflé is a dish always served at Thanksgiving in my family. Always known for her delicious home-cooked meals, my Grandma Jo, graciously handed over her recipe to me, to create in a “paleo way.”
Pureed roasted root vegetables are a delicious alternative to traditional mashed potatoes. The warm and slightly sweet flavor from roasting these vegetables makes this side dish perfect for a juicy, slow-roasted cut of meat.
This hearty lamb soup is the perfect comfort food on a chilly evening. The flavors of thyme, rosemary, and garlic will fill your home with wonderful warm smells as this soup cooks on the stove. After slow cooking for hours, the tender lamb will easily fall apart with each bite of this delicious stew.
Part of the enjoyment with this recipe, for me, is the warm, rich aromas that waft through the house as the pot roast cooks. By the time dinner rolls around, there is great anticipation for the meal at hand. The best part about this recipe is that it is simple to make and can provide leftovers for several additional meals.
This salad is our go-to side dish for any time lamb is on our menu. Our simple Greek salad is perfect plated under “lamburgers,” paired with grilled lamb chops, or even with roast leg of lamb.
Here in our little corner of Pennsylvania, golden beets are only seen in the stores every so often. When we do come across them, this salad instantly gets planned for an upcoming meal. We love the way the warm and tender beets compliment the cool, sweet crunch of the Fuji apples.
The simple marinade for this salmon is our go-to marinade for chicken, fish, or shrimp. It is also fantastic over lamb, and would pair well with pork as well. The lemon in this marinade brings fresh flavor to the deep aromas of the basil and oregano.
The use of coconut oil in this recipe enhances the naturally sweet flavor of fresh scallops. This recipe is one that is perfect as an entree, and would also be a fantastic appetizer for guests.
“En papillote” means to cook in paper. For this recipe we steam fish, vegetables, and herbs in parchment paper to create a complete dish. This results in a meal full of flavor, lightly cooked, in a quick amount of time.
Our first date as a couple was to a great little sushi place in Pittsburgh. We’ll always have fond memories of that date, though when we want to revisit the flavors we make this great rice-free version instead.
Lemon and garlic are classic flavors often paired with chicken. For this dish, the lemon and garlic, along with the shallot, infuse the chicken under the skin, resulting in wonderful flavor, all tucked under crispy grilled skin.
One of our very first recipes we posted on our blog was for portobello turkey burgers. The use of a big juicy portobello mushroom cap is a tasty replacement for the typical grain-filled bun. Serve this alongside sweet potato fries for a classic summertime meal.
