Pineapple Bacon Guacamole w/ Tostones
Want to kick your guacamole up a notch? Add some grilled pineapple and crispy bacon to the mix! Serve along side some crispy plantain chips and boom, show stopper!
Ingredients
- 3 whole 3 whole 3 whole Avocado
- 1 whole 1 whole 1 whole Lime, grilled, then juiced
- 4 pieces 4 pieces 4 pieces Pineapple, sliced and grilled then diced
- 3 pieces 3 pieces 3 pieces Bacon, cooked then chopped
- .5 tsp .5 tsp .5 tsp Salt
- .5 tsp .5 tsp .5 tsp Black Pepper
- .5 tsp .5 tsp .5 tsp Chili Powder
- .5 tsp .5 tsp .5 tsp Cayenne Pepper
- 1 Tbsp 1 Tbsp 1 Tbsp Cilantro, fresh, chopped
- 1 clove 1 clove 1 clove Garlic, minced fine
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- heat grill to high
- cut lime in half and grill face down, also grill pineapple slices, just enough to get grill marks
- dice bacon and fry in skillet, when cooked place on paper towels to drain
- combine all ingredients and mix
Notes
For Tostones: -cut plantains in 1 inch sections -fry in coconut oil until browned on both sides - remove from oil and press flat with spatula or bottom of a can - Fry again in coconut oil on both sides until crispy
