Paleo “Peanut Butter” Thumbprint Cookies
PB&J flavors for paleo eaters! The perfect nutty flavor and chewy texture will remind you of your old favorite! Add your choice of jam or jelly to make this the perfect snack!
Ingredients
- 0.5 cup 0.5 cup 0.5 cup Sunbutter
- 1 Tbsp 1 Tbsp 1 Tbsp Ghee
- 2 Tbsp 2 Tbsp 2 Tbsp Honey, Raw
- 1 tsp 1 tsp 1 tsp Pure Vanilla Extract
- 0.5 cup 0.5 cup 0.5 cup Blanched Almond Flour
- .5 cup .5 cup .5 cup Almond Meal
- 0.25 tsp 0.25 tsp 0.25 tsp Baking Soda
- .25 tsp .25 tsp .25 tsp Sea Salt
- .25 tsp .25 tsp .25 tsp Cinnamon, ground
- 0.25 cup 0.25 cup 0.25 cup Strawberry Preserves (click for recipe)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper
- Mix wet ingredients in a small bowl until well incorporated
- Mix remaining ingredients in a large bowl and add the wet ingredients
- Place batter in the fridge for a half hour
- Scoop 1/2 tbsp sized cookies and place on the cookie sheet 2 inches apart
- Press down with a fork twice in opposing directions for traditional cookies (grease the fork if it sticks to the dough)
- Use a small spoon or your thumb to press a divot into the dough and spread the cookies a bit for the thumbprints
- Bake for 7 minutes or until the edges just start to brown
- Let cool fully on the cookie sheet
- Add a tsp of your jam of choice into the divots on your thumbprints
- These are the BEST the day after they are made and keep well in an airtight container on the counter for a up to a week
