Offal-ly Good Paleo Tacos de Lengua
Tender and flavorful beef tongue tacos served on paleo tortillas
Ingredients
- 1 whole 1 whole 1 whole Beef Tongue
- 1 whole 1 whole 1 whole Onion, roughly chopped
- 4 whole 4 whole 4 whole Bay Leaf
- 4 cloves 4 cloves 4 cloves Garlic
- 3 cup 3 cup 3 cup Bone Broth (click for recipe)
- 1 Tbsp 1 Tbsp 1 Tbsp Lard
- 1 tsp 1 tsp 1 tsp Cumin
- 2 tsp 2 tsp 2 tsp Oregano, dried
- 1 tsp 1 tsp 1 tsp Salt
- 4 whole 4 whole 4 whole Paleo Tortillas (Pinkie's Paleotillas), can substitute paleo wraps
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place tongue in the crockpot with onion, bay leaves, garlic and broth and cook on low for 6 hours
- Peel the outer membrane off of the cooked tongue (I was able to do this with my hands and a sharp paring knife)
- Cut the meat into small cubes
- Heat cooking fat in a pan over medium heat
- Add cubed meat, cumin, oregano and salt to pan and fry for 5 minutes
- Serve beef tongue in tortillas topped with salsa verde
Notes
I served the beef tongue in Pinkie's Paleotillas but feel free to use your favorite store bought or homemade paleo tortillas.
