Maple Glazed Pulled Pork Stuffed Sweet Dumpling Squash
The sweetness from the maple glazed pulled pork paired with the creaminess of the sweet dumpling squash is the perfect marriage of fall flavors and textures!
Ingredients
- 4 whole 4 whole 4 whole Squash, Sweet Dumpling
- 1 whole 1 whole 1 whole Onion, chopped
- 2 lb 2 lb 2 lb Pork Roast, Loin Sirloin Roast
- 1 tsp 1 tsp 1 tsp Smoked Paprika
- 1 tsp 1 tsp 1 tsp Chili Powder
- 1/2 tsp 1/2 tsp 1/2 tsp Cumin
- 1/2 tsp 1/2 tsp 1/2 tsp Cayenne Pepper
- 1 1/8 tsp 1 1/8 tsp 1 1/8 tsp Salt, divided
- 2/3 cup 2/3 cup 2/3 cup Maple Syrup, Pure
- 2/3 cup 2/3 cup 2/3 cup Apple Cider Vinegar
- 1/2 cup 1/2 cup 1/2 cup Tomato Paste
- 2 cloves 2 cloves 2 cloves Garlic, minced
- 1/8 tsp 1/8 tsp 1/8 tsp Black Pepper
- 4 Tbsp 4 Tbsp 4 Tbsp Ghee, or grass-fed butter
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop the onion and place into slow cooker
- Mix together the smoked paprika, chili powder, cumin, cayenne pepper, and 1 tsp salt
- Sprinkle the seasoning all over the pork and then place it into the slow cooker on top of the onions
- Whisk together the maple syrup, apple cider vinegar, and tomato paste
- Pour the sauce directly over the pork and cook on low for 6-7 hours
- An hour or two before the pork is done, preheat your oven to 400 F for the squash
- Slice off the top of the squash to reveal the seeded center (this may be deeper than you think)
- Scoop out the seeds and place the squash into a glass baking dish
- Sprinkle the pepper and the remaining salt onto the flesh of each squash
- Place a tablespoon of ghee or grass-fed butter into the hollow center of each squash
- Place the squash into the oven and roast for 1 hour (keep an eye on it starting at 45 minutes into cooking)
- While the squash is roasting, shred the cooked pork with two forks and toss well with the sauce remaining in the slow cooker
- When the squash is perfectly roasted, remove from the oven and stuff 1 cup of the shredded pork into each of the squash
