Easy Coconut Curry
This Easy Coconut Curry is the perfect dinner option. It's fast, simple, healthy, and delicious!
Ingredients
- 1 whole 1 whole 1 whole Onion, chopped
- 1 Tbsp 1 Tbsp 1 Tbsp Garlic, minced
- 1 pieces 1 pieces 1 pieces Ginger Root, 1 inch piece, minced
- 1 tsp 1 tsp 1 tsp Coconut Oil, Organic
- 1 Tbsp 1 Tbsp 1 Tbsp Curry Powder
- 0.5 tsp 0.5 tsp 0.5 tsp Cinnamon, ground
- 1 tsp 1 tsp 1 tsp Salt
- 0.25 tsp 0.25 tsp 0.25 tsp Cayenne Pepper
- 4 cup 4 cup 4 cup Coconut Milk, canned
- 0.5 cup 0.5 cup 0.5 cup Water
- 1 Tbsp 1 Tbsp 1 Tbsp Lime Zest
- 2 whole 2 whole 2 whole Lime, juiced
- 8 cup 8 cup 8 cup Frozen Vegetables , fresh/frozen vegetables, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt 1 tsp coconut oil in a large sauce pan
- Add the onion, garlic, and ginger and saute until onions are translucent (2-5 minutes)
- Add in the curry powder and cinnamon and stir until fragrant (~1 minute)
- Add the remaining ingredients (except vegetables), allow to come to a boil, and then simmer for 20-30 minutes
- Add the vegetables to the sauce the last 10 minutes of cooking
Notes
Chicken can be added to the curry for some extra protein.
