Crockpot Paleo Beef Stew
Throw the simple ingredients for this paleo beef stew into the crockpot for an easy yet delicious weeknight meal. This stew is hearty, filling and a perfect dinner on a cold winter evening!
Ingredients
- 2 lb 2 lb 2 lb Stew Beef, grass-fed if possible
- 5 Tbsp 5 Tbsp 5 Tbsp Tapioca Starch, divided
- 1 Tbsp 1 Tbsp 1 Tbsp Olive Oil, Extra Virgin
- 2 whole 2 whole 2 whole Sweet Potato, peeled and chopped
- 6 whole 6 whole 6 whole Carrots, organic, chopped
- 6 whole 6 whole 6 whole Celery, chopped
- 2 whole 2 whole 2 whole Vidalia Onion, medium, chopped
- 2 cloves 2 cloves 2 cloves Garlic, minced
- 2 cups 2 cups 2 cups Beef Broth
- 6 oz 6 oz 6 oz Tomato Paste
- 1.5 tsp 1.5 tsp 1.5 tsp Salt, divided
- 1.5 tsp 1.5 tsp 1.5 tsp Black Pepper, divided
- 1 tsp 1 tsp 1 tsp Thyme, dried
- 1 tsp 1 tsp 1 tsp Parsley
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Season the stew meat with a 1/2 teaspoon of salt and a 1/2 teaspoon of pepper
- In a large bowl, toss the stew meat with 4 tablespoons of the tapioca flour until the meat is well coated
- In a large saute pan, heat the extra virgin olive oil over medium heat and cook the stew meat until brown on both sides (about 5 minutes)
- Place the sweet potatoes, carrots, celery, onions, and browned stew meat into the crock pot
- In a medium bowl, combine the beef broth, tomato paste, thyme, parsley and the remaining tapioca flour, salt and pepper and mix well
- Pour the broth mixture into the crockpot over the meat and vegetables and stir it all until it is combined well
- Cook on low for 8 hours
- Serve and enjoy!
