Apple Pie Cake
This Apple Pie Cake is light and fluffy and the perfect guilt free breakfast or dessert.
Ingredients
- 0.5 cup 0.5 cup 0.5 cup Coconut Flour
- 0.5 tsp 0.5 tsp 0.5 tsp Baking Powder
- 0.25 tsp 0.25 tsp 0.25 tsp Salt
- 0.25 tsp 0.25 tsp 0.25 tsp Baking Soda
- 1 tsp 1 tsp 1 tsp Cinnamon, ground
- 0.5 tsp 0.5 tsp 0.5 tsp Nutmeg, ground
- 3 whole 3 whole 3 whole Eggs
- 0.333 cup 0.333 cup 0.333 cup Maple Syrup, Pure
- 2 Tbsp 2 Tbsp 2 Tbsp Coconut Oil, Organic
- 0.5 cup 0.5 cup 0.5 cup Almond Milk
- 1 tsp 1 tsp 1 tsp Orange Zest
- 2 Tbsp 2 Tbsp 2 Tbsp Orange Juice
- 1 tsp 1 tsp 1 tsp Pure Vanilla Extract
- 0.25 cup 0.25 cup 0.25 cup Almond Meal/Flour
- 2 Tbsp 2 Tbsp 2 Tbsp Coconut Sugar
- 2 2 2 Apple, Gala, peeled and sliced
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees
- Mix the dry ingredients in a large bowl
- Add the eggs, syrup, melted coconut oil, milk, orange zest, orange juice, and vanilla and combine well
- Stir in the apples
- Pour into a greased 8x8 baking dish
- Combine all the almond flour, coconut oil, and coconut sugar until a crumbly mixture is formed
- Sprinkle over the cake
- Bake for 35-45 minutes or until a toothpick comes out clean

I made this today and it was really delicious. The recipe seems to have left out how many apples to use, so I peeled, cored, and diced 2 small apples and it seemed to be the perfect amount. It turned out moist, and the topping added the perfect amount of sweetness. I would definitely make this again!
