Picture this. It’s a warm Saturday afternoon, and you’re getting ready to do some weekend baking from Make It Paleo 2, our brand new cookbook! Up on the list is a layer cake with a meringue frosting. Which, as you might guess from the title, is a copy of the wedding cake we had at OUR wedding. Super yum!

We’ve been fortunate to have this very same mixer in our kitchen for three years now, and it is, without a doubt, the most reliably awesome countertop appliance we own. There’s one thing you can always count on: a KitchenAid will do exactly what its supposed to do. How many things can you actually say that about these days? We’ve used our 7qt KitchenAid through the making of THREE cookbooks, and it has never let us down!

Every spring, we partner with KitchenAid in celebration of their sponsorship of the senior PGA event. This year’s 2015 Senior PGA event is being held at French Lick Resort (in Indiana), which is a Pete Dye designed golf course. As a former landscape architect, that name carries some serious clout (sort of like having a Picasso painting, or living in a building designed by Frank Lloyd Wright, or eating a dish personally cooked by Thomas Keller). You get the point, yeah? It’s a big deal.

So in celebration of KitchenAid and the Senior PGA Tour event at French Lick, we get to give away their biggest and best stand mixer! Seriously!

Strawberry Shortcake

Strawberry shortcake is the perfect summer time sweet treat. Enjoy this recipe on a warm summer evening with loved ones!

Serves: 4

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to bake at 350 degrees.
  2. In a standing kitchen mixer, blend eggs, vanilla, and maple syrup.
  3. Sift in coconut flour, salt, and baking soda, and continue to blend.
  4. Pour in melted palm shortening, and blend until smooth and creamy.
  5. Pour batter into a lightly greased and parchment lined muffin tin.
  6. Bake shortcakes for 35 minutes, remove from oven, and allow to cool on a cooling rack.
  7. Whip heavy cream, and fold in diced strawberries.
  8. Slice off the tops of the shortcakes with a serrated knife.
  9. Spread whipped cream and strawberries over the bottom layer, place the top of the shortcakes back on top, and spread more of the cream and strawberries on top.

      What a great contest, love it, what I would make first with the 7qt mixer (which I have been wanting to get for years) would be a Paleo Cake. I used to bake all the time but the past few months since I changed my diet to Paleo I haven’t baked anything so this would be the perfect time to start honing in my Paleo baking skills with that amazing mixer!

      As a graduate student it is always comforting to come home to something that takes my mind off an exhausting and often times defeating day of failed experiments. Baking has always been that comfort providing that added reassurance that a crappy day can end on a sweet note 🙂 I would use the kitchen aid to bake chocolate chip cookies because CC-cookies make everything better!

I would make chocolate chip cookies in this kitchen aid because CC-cookies result in a sweet ending to some of the most frustrating of days!

      I would make cookies!! All sorts of cookies for the holidays. I’d bring them to our family parties and share with our loved ones. I’d even venture as far to make sugar free cookies for the diabetics in our family, and we have a lot of them!

      Six weeks ago, the answer to this question would be easy. I would make my grandmother’s famous cookies. We call them “big mama” cookies. And I would teach my little one how to make them. But since trying the Paleo diet and reading It Starts with Food, I have reservations about passing the cookie monster habit down. So perhaps the little one and I would make a revised version of Big Mama cookies. Or maybe we would make up our own Paleo cookie recipe to enjoy together. Either way, I know the whole family would enjoy celebrating good, healthy food with the mixer!

      What an awesome giveaway! A KitchenAid mixer has been on my wish list for years! If I won, I would whip up a batch of those Yiddish Kitchen bagels you posted a few weeks ago. Then maybe a batch of grain free chocolate chip cookies. Needless to say, I would get tons of use out of the mixer! 🙂
