Paleo Mexican Breakfast Hash
Take your breakfast to the next level with this satisfying fiesta in a skillet!
Ingredients
- 1 lb 1 lb 1 lb Ground Beef
- 4 whole 4 whole 4 whole Eggs, beaten
- 1 whole 1 whole 1 whole Sweet Potato, baked and cubed
- 0.5 whole 0.5 whole 0.5 whole Red Onion, chopped
- 1 whole 1 whole 1 whole Tomato, Beefsteak, chopped
- 0.5 whole 0.5 whole 0.5 whole Avocado, chopped
- 0.5 cup 0.5 cup 0.5 cup Cilantro, chopped
- 0.25 tsp 0.25 tsp 0.25 tsp Cumin
- 0.5 cup 0.5 cup 0.5 cup Sour Cream , optional
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a large skillet over medium heat and spray with cooking spray
- Add ground beef and onions. Break up beef using spatula
- Once beef is slightly browned add in sweet potato
- In a small bowl combine eggs with cumin, cilantro, salt and pepper
- Add eggs to skillet, flipping mixture with spatula until eggs are dispersed evenly
- Add in tomato and avocado and cook another 5 minutes
- Serve with sour cream and cilantro
