Flourless Chocolate Orange Cake
Nigella Lawson's Flourless Chocolate cake turned vegan, paleo and refined sugar free.
Ingredients
- 2 whole 2 whole 2 whole Orange, small (approx 375g total)
- 6 Tbsp 6 Tbsp 6 Tbsp Chia Seeds
- 18 Tbsp 18 Tbsp 18 Tbsp Water
- 1 tsp 1 tsp 1 tsp Baking Powder, heaping
- 0.5 tsp 0.5 tsp 0.5 tsp Baking Soda
- 2 cup 2 cup 2 cup Almond Meal/Flour
- 1.25 cup 1.25 cup 1.25 cup Coconut Sugar
- 0.5 cup 0.5 cup 0.5 cup Cocoa Powder, Organic
- 150 gram 150 gram 150 gram Dark Chocolate, melted
- 0.5 tsp 0.5 tsp 0.5 tsp Cinnamon, ground
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place oranges in saucepan and fill with water. Bring to the boil, reduce heat to a simmer and then cover and cook for 2 hours
- Soak chia seeds in water to make chia eggs
- Allow oranges to cool, then cut in half and remove any big pips
- Pre-heat oven to 180u00baC and grease and line a 28cm springform pan
- Place oranges in food processor and blitz until oranges are completely broken down
- Add all other ingredients and process until combined
- Pour batter into your cake pan and place in the oven for 50 minutes, or until a skewer comes out clean
Notes
You could top this with whipped coconut cream, either chocolate flavoured or infused with a dash of orange juice.
