Coconut Pecan Blondies
These Blondies are full of delicious flavor, the blending the coconut, pecan and coconut oil gives these a subtle caramelized flavor. They come out of the oven moist and chewy with a pecan in every bite.
Ingredients
- 2.5 cup 2.5 cup 2.5 cup Almond Meal/Flour
- 0.5 cup 0.5 cup 0.5 cup Coconut Flour
- 1 tsp 1 tsp 1 tsp Sea Salt
- 1 tsp 1 tsp 1 tsp Cinnamon, ground
- 1 cup 1 cup 1 cup Coconut, shredded or dessicated
- 1 cup 1 cup 1 cup Pecans, chopped
- .5 cup .5 cup .5 cup Coconut Oil, Organic, melted
- 0.75 cup 0.75 cup 0.75 cup Honey, Raw
- 2 whole 2 whole 2 whole Egg
- 1 tsp 1 tsp 1 tsp Vanilla Extract
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350*F / 176*C / Gas Mark 4
- Line a glass dish (approx. 11x6 inches) with parchment paper
- Place coconut in a food processor or blender and blend until small pieces are formed
- Next, mix together dry ingredients in one bowl
- Mix wet ingredients together in another bowl
- Now, add contents of both bowls together and mix well
- Press onto parchment paper until evenly distributed
- Bake for 25-35 minutes or until set
