Chocolate Almond Coconut Bites
Ingredients
- 3/4 cup 3/4 cup 3/4 cup Almond Butter
- 1 tsp 1 tsp 1 tsp Pure Vanilla Extract
- 1/3 cup 1/3 cup 1/3 cup Coconut, shredded, unsweetened
- 1/2 Tbsp 1/2 Tbsp 1/2 Tbsp Cocoa Powder, Organic
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients in a small mixing bowl.
- Stir mixture until all ingredients are equally blended together.
- Form mixture into small balls and place on a parchment lined cookie sheet.
- Place in the freezer for 10-15 minutes.
- Enjoy.

Tasted great, but the texture didn’t work for me, maybe because the almond butter I used was too runny? Never came together into balls. I ended up just putting it in a jar and eating it like nutella…yum!
I wouldn’t consider these to be “candy” per se. There is no sugar in these whatsoever, which is what I was looking for since I’m currently doing the 21DSD. I’m the kind of person that can just have a couple of spoonfuls of raw almond butter to satisfy my cravings and get rid of any headaches I might have while on a diet like this. These weren’t much more satisfying than eating almond butter by itself, but they were definitely easy to make and turn boring ol’ almond butter into a fun little snack. I rolled mine in shredded coconut after forming them into balls. Thanks for the quick and easy recipe, guys!
I had a similar problem with them not coming together into balls, likely from the almond butter being more oily. I just let them stay in the freezer longer until they hardened (~1 hr or so).
If you are able, I suggest adding a little honey. Yum!
