Cauliflower Rice
Ingredients
- 1 clove 1 clove 1 clove Garlic, minced
- 1 Tbsp 1 Tbsp 1 Tbsp Coconut Oil, Organic
- 1 head 1 head 1 head Cauliflower
- 1/2 cup 1/2 cup 1/2 cup Yellow Onion, chopped
- 1/2 tsp 1/2 tsp 1/2 tsp Himalayan Pink Salt, to taste (and black pepper, if not following AIP)
- 1 tsp 1 tsp 1 tsp Primal Palate Garlic & Herb Seasoning, (sub: 1/2 tsp himalayan pink salt)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Rinse cauliflower under cool water and pat dry.
- Using a cheese grater, grate the cauliflower to a coarse texture (approximately the size of rice grains). Using a food processor to pulse the cauliflower to desired texture works as well.
- Heat the coconut oil in a skillet over medium heat.
- Sauté the onion and garlic for 3–4 minutes, or until the onion is relatively translucent.
- Add in the cauliflower rice and continue to sauté for 4–5 minutes.
- Season with salt and pepper, and serve.

The Cauliflower Rice went really well with the Beef w/Broccoli in the Entree section. I grated the cauliflower in the food processor which is very fast.

This recipe is the first cauliflower rice recipe I’ve ever liked. The results are very good.
I’ve tried several others and have never been satisfied with the results. This one, on the other hand, was devoured by the non-veggie eaters in the family and one of the kids (a carboholic) even asked for more “rice.”
This is the first time that I’ve made cauliflower rice. I was very skeptical, but I loved it! The only thing I did differently was to add some sliced green onion and chopped pecans the last few minutes. Loved it.
My husband and I are just starting to introduce ourselves to Paleo eating. This was pretty good, even for someone who ate lots of rice, like, yesterday. It’s definitely not rice, but I could see how this would be a totally suitable replacement. Mine got watery at the end of cooking, but by the next day, the leftovers were not watery at all and much better. So I think I will drain it next time before serving if it goes watery on me again. The basic flavor is great – I doubled the garlic (we love it), used olive oil and added sliced green onions and pecans like the previous poster — and that was a great suggestion! Served with grilled leg of lamb topped with tomatoes and olives.

Deliciously addictive. Added some chilli powder for a little kick as well as mixed herbs for flavour and parsley for colour. Guilt free rice.

I tried this last night and I genuinely loved it! I’m really struggling with carb withdrawal and to have chicken curry with rice was just the ultimate comfort food but without any of the guilt 🙂 thanks so much for this incredible recipe, this is a life-changer.
I made this last night for an alternative to steamed (boring) cauliflower, it was so good and easy. I can’t wait to try some of the other recipes. I’m trying to live and eat healthier and I think Primal Palate will be my go to source for recipes. Thank you
Tried this and it was OK. Might have to find some other seasoning that will go well with this. Would not definitely make this all the time.
