Blueberry Mint Balsamic Salmon
This recipe is simple enough for a weeknight dinner, but pretty enough to serve to a crowd.
Ingredients
- 1 lb 1 lb 1 lb Salmon Filet, Wild Caught
- 0.5 Tbsp 0.5 Tbsp 0.5 Tbsp Coconut Oil, Organic
- 0.5 Tbsp 0.5 Tbsp 0.5 Tbsp Coconut Butter, Organic
- 0.25 tsp 0.25 tsp 0.25 tsp Sea Salt
- 0.5 cup 0.5 cup 0.5 cup Blueberries
- 0.5 whole 0.5 whole 0.5 whole Onion, chopped
- 2 Tbsp 2 Tbsp 2 Tbsp Balsamic Vinegar
- 1.5 Tbsp 1.5 Tbsp 1.5 Tbsp Maple Syrup, Pure
- 1 Tbsp 1 Tbsp 1 Tbsp Mint Leaves, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees
- Place salmon in oven safe baking dish
- Melt butter and coconut oil in saucepan over medium heat
- Add onions and saute until soft and translucent (approx. 3-5 minutes)
- Add blueberries and cook 1 minute
- Add remaining ingredients, reduce heat, and simmer 10-15 minutes until blueberries start to collapse
- Add blueberry mixture to salmon filets in the baking dish
- Bake for 10-15 minutes until salmon cooked through
