Apple Spice and Carrot Muffins

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 and prepare a muffin pan or glass ramekins. You can grease them or use muffin liners
  2. Combine all the dry ingredients and set aside.
  3. Thoroughly mix all the wet ingredients with a mixer or by hand.
  4. Then slowly add your dry ingredients to the mixture. Do not over mix.
  5. Fold in the carrots, apples and pecans.
  6. Fill each muffin slot about 3/4 of the way full. Bake for 20-25 minutes.
