  1. Preheat oven to 350 degrees.
  2. Add eggs, banana, and apple to your food processor and puree until smooth, about 1 minute.
  3. Add in your nuts and coconut, and blend until incorporated.
  4. Scoop batter onto a lined or greased cookie sheet, leaving at least 1/2 inch between cookies. Press down cookies to make them flat so they cook evenly.
  5. Bake 20-30 minutes until the cookies are firm to the touch.
