Picture this. It’s a warm Saturday afternoon, and you’re getting ready to do some weekend baking from Make It Paleo 2, our brand new cookbook! Up on the list is a layer cake with a meringue frosting. Which, as you might guess from the title, is a copy of the wedding cake we had at OUR wedding. Super yum!

We’ve been fortunate to have this very same mixer in our kitchen for three years now, and it is, without a doubt, the most reliably awesome countertop appliance we own. There’s one thing you can always count on: a KitchenAid will do exactly what its supposed to do. How many things can you actually say that about these days? We’ve used our 7qt KitchenAid through the making of THREE cookbooks, and it has never let us down!

Every spring, we partner with KitchenAid in celebration of their sponsorship of the senior PGA event. This year’s 2015 Senior PGA event is being held at French Lick Resort (in Indiana), which is a Pete Dye designed golf course. As a former landscape architect, that name carries some serious clout (sort of like having a Picasso painting, or living in a building designed by Frank Lloyd Wright, or eating a dish personally cooked by Thomas Keller). You get the point, yeah? It’s a big deal.

So in celebration of KitchenAid and the Senior PGA Tour event at French Lick, we get to give away their biggest and best stand mixer! Seriously!

Strawberry Shortcake

Strawberry shortcake is the perfect summer time sweet treat. Enjoy this recipe on a warm summer evening with loved ones!

Serves: 4

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to bake at 350 degrees.
  2. In a standing kitchen mixer, blend eggs, vanilla, and maple syrup.
  3. Sift in coconut flour, salt, and baking soda, and continue to blend.
  4. Pour in melted palm shortening, and blend until smooth and creamy.
  5. Pour batter into a lightly greased and parchment lined muffin tin.
  6. Bake shortcakes for 35 minutes, remove from oven, and allow to cool on a cooling rack.
  7. Whip heavy cream, and fold in diced strawberries.
  8. Slice off the tops of the shortcakes with a serrated knife.
  9. Spread whipped cream and strawberries over the bottom layer, place the top of the shortcakes back on top, and spread more of the cream and strawberries on top.

      Oh. My. Gosh. How to even decide what I would make with this 7qt stand mixer. As a new mom, I have become all about making paleo friendly meals in large, freezable quantities to save time. This 7qt mixer would allow me to up my freezer meal game by letting me double and triple my recipes, while still fitting in the bowl! I can already envision my Whole30 meat loaf, paleo friendly lactation cookies, just to name a few!

      Considering my sweet tooth is going nuts right now, I’d make that strawberry shortcake! But this gorgeous mixer would travel with me to my parents’ house every Thanksgiving to help their KitchenAid with all the cooking for our growing family.

      (I say “growing” because hopefully by then I’ll have a manfriend. No babies yet. But we could use the mixer to make tons of baby food once that happens!)

      Since I do all my cooking it would be fun to make a pie crust and have really nice meat and fruit pie that fits in the Paleo diet. Or some other baked goody that like bread that I don’t have to try and mix it by hand.

      Hard to pinpoint just one thing that I would make but my husband used to own a french bakery and made the most crazy good cinnamon rolls on the planet (he used croissant dough). He still makes them for christmas gifts so I want to rework the recipe into a healthier version that I can eat as well – and hopefully everyone else! Our Cuisinart is very old, weak, feeble, small and the peeling, husband has been wanting a new one to use to make his cinnamon rolls, he is even thinking about going into business (side biz) and sell them again – hopefully my version will be good enough to sell as well!

      My boyfriend and I have been huge into crossfit this past year, and with that we have started a 90% paleo diet. Recently we have vowed to give up wheat/grains for a full year in hopes to make the transition complete and easier for us. In doing so we need better kitchen appliances such as the Kitchen Aid Mixer! The first thing I would make is your Grain-free Chocolate Cupcakes with Toasted Marshmallow icing!

She makes amazing meals for our family of 6 and ever since our food makeover she has always wanted nice equipment to cook large meals and make batches of good food for us!       The first thing I would make would be some homemade breads. Nothing is better than fresh homemade bread coming out of the oven with butter slathered on it. Then I would make some cute cupcakes, and after that, some more complex recipes after I am familiar with the mixer.

      I would most likely use it whip up a huge batch of Paleo sweet potato casserole, my favorite! Blend up those sweet potatoes with coconut milk, ghee and some maple syrup, throw in a backing dish and cover with pecans, back in the oven for a few…mmm!!! Ah I would LOVE to win this!!!
