The Olive Garden is a disgrace. But they do have an item called Tuscan Chicken. It’s nothing like a dish you would get in Tuscany and, frankly, it is full of cream and has an identify crisis. Instead, I made a Tuscan Chicken dish that made me think, “damn, I’d order this in a restaurant!”.

Ribeye roast is a tender cut of meat that is succulent when slow-roasted at low temperature in the oven. Fresh-ground coffee is an incredible dry-rub ingredient to season meat as it gives it a smoky, deep flavor without overpowering the natural taste of the meat. This roast recipe is great for a Sunday dinner and is sure to please any palate!

A classic, and absolutely amazing, Cajun dish!

I came up with this new spin on a familiar family favorite back in October while testing Halloween recipes. I had a jar of strained tomatoes in the pantry and some ground beef and half of a cooked spaghetti squash in the fridge, and somehow I arrived at Spaghetti and Meatball Soup after not wanting to make the usual spaghetti squash with bolognese. I kept the meatballs really simple with just some salt, pepper, garlic powder and onion powder but used actual onion and garlic in the “sauce” for a bit of a fresher flavor. Even though the meatball ingredients are simple, if you have children or another helper handy, I highly recommend recruiting them as your meatball rollers since that step can be a bit tedious due to their small size!

I was inspired to start experimenting with this paleo-friendly version Of SPAM (yep, that's right) thanks to a photo The Domestic Man posted on Instagram of the real thing. I live very near where SPAM is made and grew up loving my Grandma's SPAM hotdish--I suddenly had to have some and even purchased a larger food processor just to work on this recipe! It's wonderful sliced and served warm right out of the oven, fried up and served like a burger or with breakfast fare, or even cold as a snack or meal (my youngest son takes it to school in his lunch). This is a recipe I originally came up with back in 2011, and since those were my pre-paleo days, it included black beans. I paleo-fied it last year but recently revamped it again to include bone broth; I'm always looking for ways to increase our broth consumption! Mango might sound like a funny addition to chili, but it's really amazing. I like to use my slow cooker for this recipe, as the mango almost melts away into the background and adds just a subtle sweetness that's complimented nicely by the hint of cinnamon.

Because my children and I have not followed a paleo path all of our lives, I find that occasionally incorporating the familiar flavors of old favorites into our paleo meals helps keep everyone happy. This dish, dubbed "pizzagna" by my youngest son, is a family favorite. I like to make it a bit quicker and easier by using cooked spaghetti squash from my freezer stash. I didn't factor the spaghetti squash cooking time into the overall prep or cook time, so give yourself another hour if you don't have some already cooked on hand. There are a lot of great paleo-friendly jarred sauces out there--just be sure to read labels and watch for added sugars and undesirable oils such as canola or soybean.

This spicy chicken dish goes well with, just about any side. You can grill it or bake it on a rack. I recommend using boneless, skinless chicken thighs as there is something very flavorful about darker meat when cooked in its own juices, but you can use any part of the chicken you like. It's both healthy and delicious, easy to make, and requires very little prep time. You'll find yourself making this recipe often.

These healthy lamb burgers are spiced with Moroccan seasonings and fresh herbs, and baked in the oven for a juicy and firm patty. If you have Ras-el-Hanout Moroccan spice blend on hand, replace seasonings in the ingredient list with 1 Tbsp of that. You can also use ground beef. Great for entertaining.

I went to the store one day to pick up some celery and cucumber to serve my guacamole salmon spread on, and I saw a bag of adorable mini sweet peppers that I couldn't pass up. I loved the salmon spread on the raw peppers, but I decided to try baking them, "popper" style, as most members of my family find peppers more palatable when they've been cooked. They are great both ways (as well as on hot or mild peppers)! Cooked though, the salmon mixture reminds me of a delicious and comforting tuna casserole my Grandma used to make, and who doesn't like to be reminded of Grandma?!
