Hazelnut Butter Three Ways

Every time Hayley and I go to Whole Foods (our “Happy Place”), there are a few treats I longingly gaze at while we walk up and down the aisles. My treat foods are SeaSnax, Figs, Kombucha, Jeni’s Salty Caramel Ice Cream, and Justin’s Chocolate Hazelnut Butter. I’m certainly not saying the first three are bad (not by any stretch of the imagination), I love those foods, they’re good for you, and a nice treat. The Justin’s chocolate hazelnut butter is my favorite treat by far, but it does carry a bit of guilt for me as it’s basically a cleaner version of Nutella. I really wanted to make my own version of the Justin’s because at $10 a jar, it is a pricey indulgence too!

This week, we have George (the Civilized Caveman) staying here with us before we drive up to Boston for AHS on Wednesday. We received a brand new Designer Series Blendtec Blender last week, and were just dying to try it out with some hazelnut buter recipe. With it, we also received a nut butter jar from Blendtec which is an amazing tool for making nut butters (go figure!) George and I tag teamed the hazelnut butter recipes in a sort of caveman / food lover cooking collaboration. We both took pics, shot video (coming soon), and consulted with one another for the recipes. They all turned out excellent! We are hosting the Dark Chocolate Hazelnut Butter recipe, and the Spicy Chipotle Hazelnut Butter. You can find the third recipe for Pumpkin Pie Espresso Hazelnut Butter on George’s site.

Dark Chocolate Hazelnut Butter

One of my favorite indulgences at the grocery store is Justin's Dark Chocolate Hazelnut Butter. This recipe comes as close as possible to replicating their recipe.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place hazelnuts on a baking sheet, and bake at 275 for 20 minutes.
  2. Allow hazelnuts to cool, and remove skins if necessary. Remove all that are possible to remove.
  3. Place hazelnuts in a Blendtec Nut Butter Jar (or food processor), and process until nuts are a smooth consistency. Add in cacao butter and continue to blend until smooth.
  4. Continue to process, adding in the cocoa powder, maple sugar, and vanilla extract.
  5. Once evenly blended and smooth, remove from container and store in a refrigerator until it has all been enjoyed.

Notes

The best way to make this nut butter is in a Blendtec Nut Butter jar. Add the oil as you process the hazelnuts to make it creamy.

Spicy Chipotle Hazelnut Butter

This spicy hazelnut butter has warm tones with a long, complex finish. It is the perfect complement to a bowl of coconut milk ice cream!

I’ve never heard of granulated maple sugar before. I saw some on amazon while looking. Is there a brand that is better than others?
