Picture this. It’s a warm Saturday afternoon, and you’re getting ready to do some weekend baking from Make It Paleo 2, our brand new cookbook! Up on the list is a layer cake with a meringue frosting. Which, as you might guess from the title, is a copy of the wedding cake we had at OUR wedding. Super yum!

We’ve been fortunate to have this very same mixer in our kitchen for three years now, and it is, without a doubt, the most reliably awesome countertop appliance we own. There’s one thing you can always count on: a KitchenAid will do exactly what its supposed to do. How many things can you actually say that about these days? We’ve used our 7qt KitchenAid through the making of THREE cookbooks, and it has never let us down!

This year’s 2015 Senior PGA event is being held at French Lick Resort (in Indiana), which is a Pete Dye designed golf course. As a former landscape architect, that name carries some serious clout (sort of like having a Picasso painting, or living in a building designed by Frank Lloyd Wright, or eating a dish personally cooked by Thomas Keller). You get the point, yeah? It’s a big deal.

So in celebration of KitchenAid and the Senior PGA Tour event at French Lick, we get to give away their biggest and best stand mixer! Seriously!

Strawberry Shortcake

Strawberry shortcake is the perfect summer time sweet treat. Enjoy this recipe on a warm summer evening with loved ones!

Serves: 4

Ingredients

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to bake at 350 degrees.
  2. In a standing kitchen mixer, blend eggs, vanilla, and maple syrup.
  3. Sift in coconut flour, salt, and baking soda, and continue to blend.
  4. Pour in melted palm shortening, and blend until smooth and creamy.
  5. Pour batter into a lightly greased and parchment lined muffin tin.
  6. Bake shortcakes for 35 minutes, remove from oven, and allow to cool on a cooling rack.
  7. Whip heavy cream, and fold in diced strawberries.
  8. Slice off the tops of the shortcakes with a serrated knife.
  9. Spread whipped cream and strawberries over the bottom layer, place the top of the shortcakes back on top, and spread more of the cream and strawberries on top.

      I would start experimenting, I don’t have a mixer at home at all and haven’t been able to experiment. I use my hand mixer for a lot of things and I’d love the Kitchen Aid to help me explore the varying recipes out there.

      I have wanted a stand mixer for a while. I am trying to become paleo for my kid’s health and I can’t do too much with my cheap hand mixer (small batches). I would love this item and then I can add attachments like the ice cream maker to make more healthy food for my kids.

      This is such an exciting giveaway! I would first, get out and by Make It Paleo 2 since I’m possibly the only person in America that hasn’t yet, and then I would choose the most adventurous recipe in the book to make with my new Kitchenaid mixer. Perhaps even try to recreate your wedding cake, since it looks so good!

      Well I would guess that if I won the first day would be a very busy one, as I’m sure everyone would have a request of something different to try. I have 2 individuals in my care with special needs and my in-laws live with us on the weekends, and as if that isn’t enough with my kids as well as my husband friend lives with us. (He asked 4 years ago if he could crash at our house for a couple months and is still here) But all these people make for good memories and I really do love to entertain and feed a crowd. If I won the kitchen Aid it would sure be used well.

      Oh my gosh! I just started baking on the side as a way to help supplement my income while I am in nursing school. This would be a huge help as I am current using a regular hand mixer. Oh the possibilities would be endless!

      I followed on twitter @sarahscandal; I really cannot fully express my love for this KitchenAid Mixer. Every time I see it I can’t help but think how beautiful it is and get overwhelmed with thoughts of how much yummy things I want to make with it! I’ve also loved seeing so many strawberry shortcake recipes but this one takes the cake 😉 I would HAVE to make this take on the dessert!

      This would be life changing for me and my hubby. He was diagnosed with eosinophilic esophagitis last year and based on the food allergy testing he went through we were told he should avoid dairy, rice, barley, and corn. His food allergies affect his esophagus rather than his digestive system.

      Enter the paleo diet!

      Our new diet has been great for both of us, and having awesome kitchen appliances makes it that much easier to adhere to the protocols we have to live by now.

      (Not to mention…the food is awesome!)

      We actually just made your sweet potato spicy chicken for dinner last night and it was AH-mazing!

      Having a kick a** mixer would help me delve into the world of paleo treats, I have yet to conquer a cake and that’s my next experiment.

      I would make ATK sandwich bread then I’d toast two slices, one for my wife and one for myself. I would then top each with two soft poached eggs and p’raps add a dollop of paleo hollandaise. We both REALLY miss our poached eggs on toast!
