Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 375 degrees.
  2. In a medium sized bowl, combine eggs, coconut oil, honey, vanilla extract and salt.
  3. Once mixed, blend in the coconut flour.
  4. Stir in shredded coconut and chocolate chips.
  5. On parchment lined baking sheets, drop heaping tablespoons of cookie batter.
  6. Bake for 15 minutes, or until golden brown.

    I was disappointed that when I put the coconut flour into the liquid ingredients, all the liquid was absorbed so quickly. I couldn’t get the chocolate chips and coconut to spread out because the flour mixture was too dense. I think using one cup of coconut flour was too much.

    Rachel – the first one is a track back from your blog (I believe). We had this cookie recipe on our old website, “The Food Lovers Primal Palate”. Did you originally see the recipe there?

    This is my first review and I must say I LOVE your site. I have your book “Make It Paleo” and every recipe I have made has been beyond my expectations and for that, I thank you. That is why this one surprised me. Could there be a mistake in the recipe. Maybe it should be less coconut flour?? Or, should it be more eggs? I found this to be very dry, almost cornbread-like texture. I was so excited to try it and felt I wasted such great ingredients. My only alteration to this recipe is to add macadamian nuts. The best I could give this is 2 stars. Why? Because of all your effort you put into what you do. Any ideas of why it would be dry?

    I agree with the above poster- the batter was way too dry and crumbly to form cookies. There must be some error in the recipe.

    They were really good! I’m glad I read the reviews first. I only wanted a little, so I adjusted the servings to “4-6″. I used 1 egg, 1/4 cup of coconut oil, 1/4 cup of coconut flour and then eye balled the rest of ingredients. O_0 they were moist and had a nice crumb.
