  1. Heat a large skillet over medium heat and spray with cooking spray
  2. Add ground beef and onions. Break up beef using spatula
  3. Once beef is slightly browned add in sweet potato
  4. In a small bowl combine eggs with cumin, cilantro, salt and pepper
  5. Add eggs to skillet, flipping mixture with spatula until eggs are dispersed evenly
  6. Add in tomato and avocado and cook another 5 minutes
  7. Serve with sour cream and cilantro
