Flourless Almond Butter Cookies

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350 degrees
  2. Mix together the almond butter, egg, vanilla, coconut sugar, and baking soda in a large mixing bowl
  3. Scoop spoonful of batter onto greased cookie sheet
  4. Bake 8-10 minutes until edges start to lightly brown
  5. Melt together chocolate chips and coconut oil
  6. Once cookies are cooled add chocolate to cookies as desired (dipped, drizzle, sandwiched, etc)

    I love this recipe my only note that may help others is that it takes me at least 3x the time to bake and I’ve tested in different ovens.

    These are the best!! With the third batch we decided to add mini Enjoy Life chocolate chips and we let them get a little crispy. They were sooo good, better than a traditional chocolate chip cookie!
