Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Rinse cauliflower under cool water and pat dry.
  2. Using a cheese grater, grate the cauliflower to a coarse texture (approximately the size of rice grains). Using a food processor to pulse the cauliflower to desired texture works as well.
  3. Heat the coconut oil in a skillet over medium heat.
  4. Sauté the onion and garlic for 3–4 minutes, or until the onion is relatively translucent.
  5. Add in the cauliflower rice and continue to sauté for 4–5 minutes.
  6. Season with salt and pepper, and serve.

    The Cauliflower Rice went really well with the Beef w/Broccoli in the Entree section. I grated the cauliflower in the food processor which is very fast.

    This worked great and produced soft, rice-like texture! I took it in an Asian spin and used shallots and ginger. I paired it with the Asian Beef Kabobs and it was perfect!

    This recipe is the first cauliflower rice recipe I’ve ever liked. The results are very good.

    I’ve tried several others and have never been satisfied with the results. This one, on the other hand, was devoured by the non-veggie eaters in the family and one of the kids (a carboholic) even asked for more “rice.”

    This is the first time that I’ve made cauliflower rice. I was very skeptical, but I loved it! The only thing I did differently was to add some sliced green onion and chopped pecans the last few minutes. Loved it.
