Mint Lamburgers – Make it Paleo Recipe

This past week, we FINALLY got our hands on the first few copies of Make it Paleo! At long last, we were able to see all the glossy pages together from start to finish in one big sexy book. We each took a copy and sat down to have a first look (which took the better part of an hour – damn this book is big!) Weighing in at 3.5 lbs per copy, this book does not skimp on content. We have been over the moon with excitement showing our family and friends, all of whom seem to be very impressed with the end result. I (Bill) may have even shed a few tears while looking at the book for the first time (likely due to a freak dust storm that just to happened to kick up in my general vicinity). Hayley has taken great joy telling that to everyone she talks to, so I might as well be forthcoming with that information before you hear it from your cousin’s friend. Yep, I’m a huge softie and cried when I saw the book for the first time. True story.
Anyway, it’ll still be about a week until you guys start seeing advance reviews of the book from other bloggers, so we thought we would give you all one more big bite of Make it Paleo goodness to tide you over. Initially, this post was just going to be a recipe from the book. Then, last night, we decided to shoot a short video of us flipping through the book.
Is it a bit cruel? Perhaps.

But on to the recipe we’re releasing from the book! Way back in March, we bought an entire grass fed lamb from Pellegrino Pastures near Cleveland, OH. The lamb literally lasted for a few months, and we came up with all sorts of great recipes for it. One such recipe was this one for mint lamburgers. These juicy burgers are just packed with flavor, and sit atop a crisp Greek salad. We think so highly of this recipe that we shared it with Liz (who writes Cave Girl Eats) and her “Cave Husband” when they spent a day with us at the beach this past summer. They really enjoyed these burgers, so we knew they would be a hit in our cookbook.
