Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350
  2. Oil glass baking dish with olive oil
  3. Slice 4 bell peppers lengthwise and remove stem, seeds and membranes and place cut side up in baking dish
  4. Lightly brown ground beef with onions, garlic and green pepper
  5. Add zucchini, mushrooms, diced tomatoes and tomato paste and combine thoroughly with meat and cook on low heat for a few minutes
  6. Spoon mixture in to cut peppers
  7. Place filled peppers in oven and bake for 30-40 minutes or until peppers are soft
  8. Enjoy!

    I really enjoyed the stuffing for these! Very delicious.

    My only issue was that for some reason the peppers didnt soften and I couldnt leave them in longer since the tops were drying out. I might have to try covering them next time… any other suggestions?

    Try covering the dish with foil for half of the cook time and then removing for the 2nd half of the cook time or try cooking on a lower rack in your oven. Glad you like them. 😊
