Flourless Zucchini Brownies

You will never miss traditional brownies again with these moist and fudgy Flourless Zucchini Brownies that I adapted slightly from DelightedMomma.com.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel and grate the zucchini with a microplane grater or process in a food processor until the zucchini is shredded.
  2. Put all ingredients into a medium sized mixing bowl and stir until well combined.
  3. Pour the mixture into an 8 x 8 glass baking dish.
  4. Bake at 350 degrees for approximately 30 - 35 minutes, or until a toothpick comes out clean.
  5. Let them cool completely before cutting and serving.

    SO GOOD! Here’s what I did: I grated the zucchini on a cheese grater, and then before adding the chocolate chips, I used an immersible blender to bring the batter to a uniform consistency. Also, instead of using chocolate chips I chopped up a Green & Blacks Dark Chocolate 85% Cocoa bar. The brownies turned out very moist, dark and delicious. Although next time I will probably add a little bit of fine sea salt to the batter before baking. Thanks for the great recipe!
