Cranberry Grapefruit Cookies

- 0.25 cup 0.25 cup 0.25 cup Tallow
- .25 cup .25 cup .25 cup Organic [*Spectrum Brand, sustainably sourced] Palm Oil Shortening
- .25 cup .25 cup .25 cup Pure Maple Syrup
- 1 tsp 1 tsp 1 tsp Grapefruit, zest
- .5 cup .5 cup .5 cup Coconut Flour
- .2 cup .2 cup .2 cup Arrowroot Flour
- 1 Tbsp 1 Tbsp 1 Tbsp Beef, Great Lakes brand Unflavored Gelatin
- 1 tsp 1 tsp 1 tsp Baking Powder
- .5 tsp .5 tsp .5 tsp Cream of Tartar
- .5 whole .5 whole .5 whole Vanilla Bean Pod
- .25 cup .25 cup .25 cup Organic Dried Cranberries
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 375 degrees.
- In a large bowl, combine tallow, shortening, xylitol, maple syrup, grapefruit juice and zest with a high hand mixer.
- In a second bowl, combine the coconut flour, arrowroot starch, gelatin, baking soda, cream of tartar, and vanilla.
- Slowly add the flour mixture to the wet ingredients until well combined. With a spatula, stir in the dried cranberries or cherries.
- Form into 8 large or 12 small cookies, and place on a parchment lined cookie sheet. Press down lightly on each cookie to flatten slightly.
- Bake for 10-12 minutes, and let cook on a wire cooling rack.
