Roasted Root Vegetables with Sausage

A few weeks back we received an amazing package from Primal Pastures. We’ve slowly been making our way through the goodies we got. The other night I made a quick batch of chicken soup using their pastured chicken bone broth, and yesterday I whipped up a simple roasted vegetable dish with their Italian Sausage. This recipe was really delicious, and makes for an easy meal with minimal prep.

 

 

For this recipe you just need some uncooked Italian sausage, potatoes (sweet or white), carrots, and an onion. Oh, and some seasonings and olive oil… but that’s it!

 

 

You will first want to chop the veggies, and spread them evenly on a baking sheet.

 

 

 

Then drizzle with olive oil.

 

 

I seasoned everything with a liberal amount of our Garlic and Herb blend, and then threw the veggies in the oven to roast at 400 degrees.

 

 

The sausage only takes 20 minutes to cook, so you want to be sure that your root vegetables are cooked thoroughly before adding the sausage.

 

 

Once the veggies were fork tender, and crispy on the edges, I added the sausage, and cooked for an additional 20 minutes. It was so simple, and so delicious! This is definitely a meal we will be enjoying again soon.

This simple recipe for roasted vegetables and sausage is easy to prepare, and perfect for that night when you don't have much time in the kitchen, but want a really comforting meal.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 400 degrees F.
  2. Spread the chopped potatoes, carrot, and onion out in an even layer on a large baking sheet.
  3. Drizzle the olive oil over the vegetables, and season with the Garlic and Herb Seasoning.
  4. Using a spatula, carefully toss the vegetables to make sure they are evenly coated in the oil and seasoning.
  5. Bake the vegetables for 40 minutes, stirring every so often, or until they are fork tender, and crispy on the outside.
  6. Remove the vegetables from the oven, and add the sliced sausage.
  7. Bake for an additional 20 minutes.
  8. Remove from the oven and enjoy.
