Springtime here in the ’Burgh means two things: sunny days, and fresh local strawberries. This salad is a celebration of our favorite season, bursting with vibrant colors, sweet flavors, and crunchy textures.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Top spring mix greens with sliced strawberries, sliced red onion, and chopped walnuts.
  2. Drizzle lightly with raspberry vinaigrette.
  3. Lightly toss, and serve.

    Deliciously simple. I used a Balsamic Vinaigrette instead because I couldn’t find a raspberry vinaigrette without added sugar. I’m not a huge red onion fan, but it really tied in so nicely with the sweetness of the strawberries. Just paired it with some grilled pork cutlets. Yum!

    I make this salad for the holidays and it’s always a hit! I usually do not add red onions. Goat cheese would be a delicious addition as well.
