Imagine, if you will, a marriage between traditional pork bacon and beef jerky. That is the flavor you will taste from beef bacon. If you are a bacon lover, as many are, then we encourage you to try beef bacon. It is a delicious way to bring slightly new flavors to a classic breakfast.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to broil at 500°F, and raise the oven rack to the top level.
  2. Place beef bacon strips on a baking sheet and set aside.
  3. Heat 1 teaspoon coconut oil in a frying pan on medium heat.
  4. Sauté green cabbage until soft and a bit crispy.
  5. Season with salt and pepper and remove from heat.
  6. Heat remaining teaspoon of coconut oil in frying pan on medium heat.
  7. Crack eggs into frying pan and cook 2–3 minutes, flipping once.
  8. Remove eggs from heat and plate with the cabbage.
  9. Place bacon in oven and broil for 7 minutes a side, flipping once.

Notes

When broiling the bacon, the second side will cook faster than the first. Every oven varies in temperature slightly, so keep an eye on the bacon until your first batch is cooked to perfection.

    I got your book yesterday and found this recipe this morning. Since I had all the ingredients, I decided to make it.

    One thing I did do different was that I had made a walnut-basil pesto last week and I put a tablespoon into the cabbage.

    Anyway, it was an easy meal to make. My 11-yr old daughter said that was the 2nd best breakfast I had ever made. This one lost out to some of my quiches.

    Looking forward to trying your other recipes.
