Spinach and Goat Cheese Omelet

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat Kerrygold butter in a non-stick skillet over medium heat.
  2. In a small mixing bow, whisk eggs until frothy.
  3. Sprinkle salt and pepper into eggs, and whisk again to evenly combine the egg and seasonings.
  4. Pour eggs into skillet and allow to cook until almost set.
  5. Place spinach and goat cheese over half of the omelet, and fold the opposite side over top of the filling using a high heat rubber scraper.
  6. Remove from heat, and carefully slide the omelet onto your plate,using a high heat rubber scraper to loosen any egg that is stuck to the skillet.

    Love this omelet, and make it at least once a week! I just wanted to note that the nutrition information is incorrect. The tab at the top reads that the entire omelet contains 196 calories, 16 grams of fat, and 4 grams of protein. There’s no way a 3-egg omelet (80 calories per egg for a total of 240 calories) that includes 1 tablespoon of butter (100 calories), and 1 ounce of goat cheese (70 calories) could be that low. 😉 Nonetheless, this is delicious! Just wanted to let you know so that you could correct the information. 🙂
