Spiced Carrot Coconut Butter

Coconut butter is an incredible vehicle for building flavors. This spiced carrot coconut butter makes for an excellent topping to dairy-free ice cream, mixed with coconut flakes for a quick dessert, or eaten straight from the container to nix a sweet craving with no added sugar.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place all ingredients in a medium bowl and mix well with a spoon. Hard work pays off, right?
  2. It will harden if stored in the fridge. Simply soften by placing in a warm oven for a few minutes.

Notes

I prefer to use fresh grated nutmeg in this recipe! You can also sub the walnuts for pecans as well as add some grated lemon zest too! If you don't have a juicer, you can buy carrot juice from the store.
