Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix 1 cup of the coconut water with the coconut milk and pour into popsicle molds 1/3 of the way full
  2. Place popsicle molds in the freezer for 30 minutes
  3. While they are in the freezer prepare the second layer by blending (regular blender or immersion blender) 1 cup of the coconut water and your blueberries
  4. Strain out the skin and seeds with a fine mesh strainer and pour into the molds until they are 2/3 full
  5. Push the popsicle sticks into the molds just breaking through the first layer so they stand up in the middle and return the molds to the freezer
  6. Blend the remaining coconut water and cherries together then strain
  7. Pour the cherry mixture into the molds and return to the freezer
  8. Freeze overnight and serve
  9. Enjoy a refreshing treat without all the added sugar, chemicals and artificial colors!

Notes

***With molds like the ones I used you will need to make sure the second layer is not too frozen so you can push the plastic piece through, if this seems annoying (it was for me) I recommend using popsicle sticks instead – it will make your life easier***
