My husband and I are excited to get started on the 30 Day Intro to Paleo… but the thing is, we both work full time. And until late October, we also work weekends at a Rennaisance Faire, which is two 12 hour days in a row.
We may end up waiting until the end of Faire to start, so we'll at least have weekends, but how do you reconcile cooking 3 meals a day with being out of the house for 10 hours, minimum, every weekday? It looks like we'd have to cook the next day's breakfast AND lunch at the same time we're cooking that night's dinner, and not only do I not have that much time, I don't think I have that many pans.
I know that I can always make extra dinner, and just take another helping of that for the next day's lunch, but that still involves cooking the next morning's breakfast while I'm making dinner, or getting up early to cook breakfast, which we don't do. So, those of you who work full time and still have to do all the shopping and cooking – how do you make it all work, and still have time to do anything else at the end of your day?
