My husband and I are on day 4 of week one – yes we are following the weekly guidelines in the book! So far the recipes have been amazing, and the only one I've had trouble with is the skillet chicken leg quarters. At the beginning of the recipe it says to preheat the oven, then you never put anything in the oven! It took forever to get the chicken to cook all the way through, much longer than the recipe stated. By the time it was cooked the asparagus and onions were mushy. Delicious, but mushy. Any suggestions to improve this recipe? My favorite has been the cobb salad – it was amazing. I can't wait to eat it again!

I will try that thank you!! Was wondering also, when you started this did you have trouble being extremely hungry between meals? I have been snacking on fruits and veggies between but not helping. I don't know if this is normal or not. Being new to this I don't know what to do. Any suggestions? Thanks

Hi Everyone! Sorry for the confusion. Here is the correct process:
Process number 6 says add vegetables to the pan, that means the pan with the chicken. Then when it says lightly toss and cook for 15 minutes, that means placing the skillet with the chicken and vegetables into the oven and cooking for 15 minutes.
Then remove from oven, lightly toss again, and cook for a remaining 20 minutes.

Thanks for responding Kara! I'm trying that again this week so we will see how it goes! Also, some feedback – I think avocados should be on the grocery list because you can't really keep them stocked in the kitchen. Can't tell you how many times I had to dash out for an avocado!
Gtlogan – I was incredibly hungry the first two weeks but it has gotten a lot better! Now I still eat between meals but a piece of fruit or some nuts is all I need, and the hunger has passed. It's just your body adjusting to life without processed sugars. My dad went through the same thing we he started his ketogenic diet. Good luck!
Not yet! I would cook the chicken separately from the asparagus and onions, and finish it in the oven for maybe 20 minutes. It's funny because the shopping list is missing some ingredients – like avocado and olives – that you use a lot of. The recipes are great though!
I am about to ask some more question but thanks to Kara, she already answered it. Sometimes when I am having a problem with the recipe, I'm doing it in my own way. Is it really necessary to follow every step in the procedures?
