Eggs are one of our favorite sources of protein. We eat them everyday for breakfast, and we look forward to our trips to the farmers market to purchase the best pastured eggs in town. We only buy pastured eggs. These are eggs that came from chickens who were raised on pasture and got to roam around and eat bugs. These eggs are the highest in omega 3 content, and are usually have a dark orange yolk. Most chickens these days are fed a vegetarian diet, which is not an optimal diet for chickens. This results in an unhealthy egg. Although eggs are a super food in our home, for some they can be problematic. For those suffering with an autoimmune disease, it is best to avoid eggs as they can can cause problems for those conditions.
